Wingin' it

Blitz? What is a first down or first and 10? And exactly what does a player do to have an illegal motion called on him? And where exactly is the line of scrimmage?

These are just four in a never-ending list of NFL terminologies that leave many people scratching their head in confusion during because they simply don't know much about football, but when it comes to Super Bowl Sunday, it doesn't matter that they don't know "jack" — because all that really matters is three words — Super Bowl party! And of course that means food and lots of it.

Sandals Royal Bahamian Hotel Executive Sous Chef, Chef Seanette Brice is one of those persons who owns up to not knowing one iota about football, but there's one thing she does know, and it's that she likes attending the Super Bowl parties for the food. One particular party she says is always fabulous is the one that Sandals Royal Bahamian hosts in their Royal Theater and is a room filled with food to feed a small army and big screen televisions for their guests' viewing pleasure.

This year, Sandals guests are expected to munch on chicken roll-ups, fish roll-ups, nachos with the works from guacamole to sour cream and fresh tomato salsa to a fruit and cheese spread to leave them wide-eyed. With jalapeno cheese poppers and mozzarella sticks and a popcorn machine popping fresh corn all night, they probably won't know where to start. But, if they seek out Chef Brice and ask her opinion, they will definitely want to start with Sandal's famous buffalo and fried chicken wings that are usually the hit of the night, and which are on the menu in their Cricketer's Pub and are a much-requested item.

"Our chicken wings are some of the best around and perfect for a Super Bowl party," says Chef Brice. "They're quick and easy to prepare and filling, and you can hold them as you watch the game and not be distracted," she said. "And they're very popular here at Sandals. We prepare 40 pounds of wings per night, and always have to do back-up, and still end up selling out at the end of every night.

"The hot wings have a sweet heat to them, and the regular fried wings are very seasoned, and when you dip it into your sauce, it marries well together," she said.

Off their buffalo and fried wings, she says it's a toss-up to determine the most popular, because she says they're both well-requested items. Put them on your Super Bowl party menu she says and sit back and watch what flies off the buffet table. She assures that their Sandals wings would be definite hits.

At Sandals they serve their buffalo wings with a cooling Blue Cheese Fondue, which she says is easy for the average person to replicate at home. Their regular fried wings are served up with a BBQ sauce or a hot sauce, to appease those persons that like heat and those that don't.

As you "wing it" this Super Bowl Sunday, Chef Brice says to be cautious, and not overcook your wings and they will come out perfect. She suggests using corn or vegetable oils, because of their high smoking points, and heating the oil to 350 degrees, which you can check with a thermometer, before placing wings into the oil. She also says to season your wings, then egg and flour them for the perfectly cooked wing every time. To ensure that you're not serving raw chicken, she encourages you to prick your wings with a fork after a few minutes of cooking time to check that the juices run clear. If they do, she says your wings are done.

Oh — and for all those people attending Super Bowl parties on Sunday just for the food — at least try to know who the teams are playing for the Vince Lombardi trophy. It's Drew Brees and the New Orleans Saints squaring off against Peyton Mannings and the Indianapolis Colts in Super Bowl XLIV (44). One more bit of information that should keep the heat off your back — the game is being played at the Land Shark (Dolphin) Stadium in Miami. If you know nothing else at least you know that.
